Paneer Specifications Every B2B Buyer Should Know

Paneer is deceptively simple. For a household it is just fresh cheese; for a B2B buyer it is a technical product whose fat, moisture and texture decide how it behaves in a curry, on a grill or after three months in a freezer. Getting the specification right before you place a bulk order saves rejections, reworks and disappointed customers.

The four numbers that matter

  • Milk fat (on dry matter): standard paneer runs at roughly 50% fat on dry matter, but this is fully customisable. Higher fat gives a softer, richer bite; lower fat is firmer and more economical.
  • Moisture: fresh paneer sits around 55–60%, frozen slightly lower. Excess moisture shortens shelf life and causes crumbling; too little makes the product rubbery.
  • Texture: it should hold its shape on cooking without becoming hard — a balance controlled at the setting and pressing stage.
  • Cut & format: block, cubes or tikka-cut, each suited to a different end use.

Fresh vs frozen

Fresh (vacuum-packed) paneer carries a chilled shelf life of roughly 15–21 days and is preferred for domestic retail and food service with fast turnover. Blast-frozen paneer holds for 9–12 months and is the practical choice for export and for buyers who need buffer stock. The specification barely changes; the packaging and cold chain do.

Packaging for your channel

Retail buyers usually want 200 g, 500 g and 1 kg vacuum packs, optionally under a private label. Institutional and HoReCa buyers prefer 5–10 kg formats. Decide this early — it changes tooling, labelling and per-unit cost.

Documentation to ask for

A serious supplier should provide a batch-wise Certificate of Analysis (COA), lab reports and FSSAI licence details as standard, with export documentation where applicable. This is your proof that the paneer actually meets the spec you agreed.
