"Ghee" on a purchase order is not enough information. Cow and buffalo ghee look, smell and price differently, and the right choice depends entirely on your market and application.

Cow ghee

Golden-yellow, with a lighter aroma and a fine grain, cow ghee carries strong premium and wellness associations. It is the default for health-positioned retail brands and for markets that prize a delicate flavour.

Buffalo ghee

Whiter, with a heavier, richer aroma and a granular set, buffalo ghee typically offers a better yield and a more economical price point. It is widely used by sweet manufacturers, food processors and value retail lines.

The specs to lock down

  • Milk fat: ≥ 99.7% for both.
  • Moisture: ≤ 0.3%.
  • Free fatty acids (FFA): a freshness and quality marker — lower is better; AGMARK "Special" grade is available on request.
  • Grain & aroma: agree a reference sample so expectations match.
